Cigalas al Grill (Grilled Langoustine) a Classic Ecuadorean recipe for a dish of langoustines that are halved, cooked under a grill (broiler) and served seasoned with salt and lemon juice.

Ingredients:

800g langoustines (Dublin bay prawns)
1 lemon
dash of extra-virgin olive oil
large flakes of sea salt, to taste

Method:

Halve the langoustines lengthways then arrange, cut side up, on a baking tray. Drizzle lightly with oil then place under a hot grill (broiler) and cook for about 2 minutes, or until the flesh turns opaque and the shells are pink.

Serve immediately, garnished with flakes of sea salt and the juice of 1 lemon.
