Cider Fruitcake

Ingredients:

225g self-raising flour
1 tsp baking powder
75g butter (cut into small cubes)
60g apples chopped roughly
5 tbsp currants
150ml cider (or apple juice)
1 egg, beaten
175g fruit (cranberries, raspberries, blackcurrants, blackberries all work well)

Method:

Grease a cake tin (or a loaf tin) and line with baking parchment. Sieve the flour and baking powder into a mixing bowl, adding in the butter, Rub with your fingers until the mixture resembles fine breadcrumbs. Stir in the sugar, apples and currants. Pour in the cider and egg, mixing until thoroughly blended.

Stir in the other fruit very gently so that they do not break up, Pour the mixture into the prepared cake tin and bake in a preheated oven at 190°C until the cake has risen and is slightly golden (about 35 minutes). When ready leave to cool thoroughly in the tin and then serve.

The cake is an ideal accompaniment to coffee or it can be warmed and served as a dessert with mint cream or ice cream.
