This is a classic Irish cake with the twist that mashed potatoes are included in the batter. The addition of potatoes gives the cake a surprisingly light and moist texture. Once you have tried this recipe, I will guarantee that you will start adding potatoes to all your cake batters.

Ingredients:

300g mixed dried fruit
30g mixed peel, chopped
250–300ml dry cider
115g potatoes boiled until tender and passed through a fine-meshed sieve to purée
115g butter, diced
175g light soft brown sugar
225g plain flour
2 tsp mixed spice
1 tsp bicarbonate of soda
1 egg, beaten

Method:

Combine the dried fruit and mixed peel in a bowl. Pour over the cider and set aside to soak over night (use a non-reactive bowl).

The following day, turn the fruit and cider mix into a non-reactive saucepan and add the butter and sugar. Bring the mixture gently to a boil, stirring occasionally, reduce to a simmer and cook for 10 minutes.

Take the pan off the heat and set aside to cool slightly. then mix in the flour, mixed spice, bicarbonate of soda and beaten egg. You should end up with a batter that has a soft dropping consistency.

Pour the batter into a buttered and lined 20cm diameter springform cake tin. Transfer to an oven pre-heated to 180°C and bake for about 80 minutes, or until nicely browned and firm to the touch in the centre.

Allow the cake to cool in the tin for 10 minutes then turn out onto a wire rack to cool completely.

Store in an air-tight tin to mature for at least 1 day before slicing and serving.
