Cider and Apple Brined Turkey

Ingredients:

1l apple juice
1l cider
450g brown sugar
140g sea salt
3l water
3 oranges, quartered
120g fresh ginger, thinly sliced
15 whole cloves
6 bayleaves
6 large garlic cloves, peeled and crushed
vegetable oil or melted butter

1 prepared turkey (about 6kg)

Method:

Combine the apple juice, brown sugar and salt in a large saucepan. Bring the mixture to a boil, stirring to dissolve the ingredients. Take off the heat then allow to cool to room temperature before adding the cider. Transfer to the refrigerator and chill.

In a large, non-reactive container combine the apple mixture with all the remaining ingredients then add the turkey, ensuring that the whole bird is submerged (use a heavy weight on top of the bird, if necessary). Refrigerate for 24 hours to marinate then remove the turkey from the brine, rinse thoroughly inside and out and pat dry with paper towels. Fold the wing tips under the bird then brush the outside with melted butter.
