Christmas Island Crab Rendang is a traditional dish from Christmas Island cuisine, featuring succulent crab meat cooked in a rich and aromatic rendang sauce. This dish is perfect for a festive holiday meal or any special occasion.

Ingredients:

1kg fresh crab (coconut crab preferably), cleaned and cut into pieces
1l coconut milk
5 shallots, finely chopped
4 garlic cloves, minced
2 lemongrass stalks, bruised
4 kaffir lime leaves
3cm pice of galangal, sliced
3cm piece of ginger, sliced
3 red chilies, sliced
1 tsp turmeric powder
1 tsp coriander powder
1/2 tsp cumin powder
1/2 tsp fennel powder
2 tbsp tamarind paste
Salt to taste
2 tbsp vegetable oil

Method:

Place a large pan over medium heat. Add the vegetable oil and use to fry the shallots, garlic, lemongrass, kaffir lime leaves, galangal, ginger, and red chilies. Fry for about 2 minutes, or until fragrant.

Add the turmeric, coriander, cumin, and fennel powder. Stir well to combine.

Pour in coconut milk and bring to a gentle simmer. Now add the crab pieces and tamarind paste. Season with salt.

Return to a simmer and cook for 1.5 to 2 hours, stirring occasionally, until the sauce thickens and the crab is cooked through.

Serve this Christmas Island Crab Rendang hot with steamed rice.
