This is a classic Winter soup made with puréed sweet chestnuts that is typically served around Christmas time.

Ingredients:

400g sweet chestnuts
4 tbsp butter
1 onion, chopped
1 garlic clove, chopped
1 potato, peeled and diced
1 tbsp plain flour
1.5l vegetable stock
4 celery sticks, chopped
2 tbsp dry sherry
300ml single cream
salt and black pepper, to taste

Method:

Cut a cross in the top of each chestnut with a knife then bring a pan of water to a boil and add the chestnuts. Simmer for 30 minutes then drain the chestnuts and allow to cool. When cold enough to handle peel the chestnuts and rub off any remaining brown skin.

Melt the butter in a pan and use to fry the onion and garlic for about 6 minutes, or until softened. Sprinkle the flour over the top and stir to combine thoroughly. Cook for 1 minute, stirring all the while then gradually add the stock to the pan, stirring constantly to form a smooth sauce.

Bring the mixture to a boil then add the chestnuts and all the vegetables. Bring to a boil, reduce to a simmer and cook for 15 minutes, or until the chestnuts are very soft. Take off he heat and allow to cook a little before puréeing in a food processor.

Return to the pan, season with salt and black pepper then re-heat gently (do not boil). Stir-in the sherry and single cream then ladle into warmed soup bowls.
