Vanilla Ice Cream as used as a base for this British recipe of Christmas Pudding Ice Cream.

Ingredients:

500ml plain vanilla ice cream
300g part-cooked Christmas pudding
6 tbsp Drambuie (or other liqueur)
6 tbsp mixed dried fruit, finely chopped

Method:

While the ice cream softens, crumble the Christmas pudding into a large mixing bowl. Add the ice cream and mix until the whole is evenly distributed. Spoon into six teacups and place in the freezer to set. When ready to serve, dip the underside of the cups into hot water, invert over the serving plates and tap to turn out. Sprinkle the top with the mixed fruit and pour over a spoonful of the liqueur.
