Here is a modern update on the traditional Christmas sugar mice principle. And they're so cute — your kids really will love them!
Christmas Mice: An American recipe for a Christmas sweet (candy) of mice formed from cherries, chocolate and almonds that make an excellent children's gift.
Ingredients:
440g (16 oz) jar of maraschino cherries, drained
275g mini white chocolate chips (for the eyes)
330g dark chocolate
60g paraffin wax
275g slivered almonds
235g white icing
cherry or cranberry pieces for the noses
440g chocolate kisses (Hershey's [or make your own chocolate drops by melting chocolate, part cooling and piping into cone shapes)
Method:
Chop the dark chocolate and paraffin into pieces, combine in a bain-marie (double boiler) set over barely simmering water and stir until melted and combined.
Take a maraschino cherry by the stalk (these will be the tails) and dip the entire cherry in the melted chocolate. Attach one chocolate kiss to the end opposite the tail to form the mouse head.
Arrange on a sheet of greaseproof (waxed) paper so that the cherry stalk lies along the paper to form the mouse tail. Arrange two slivered almonds between the chocolate kiss mouse head and the cherry body to form the mouse's ears.
Pipe white icing in the positions of the eyes and the nose. Attach white chocolate fragments for the eyes and a piece of red cherry or cranberry for the nose.
Allow the ingredients to set then either store in an air-tight tin or serve.
