Christmas Ham

Method:

Combine the onion, cloves, bay leaves, peppercorns, lemon zest, ginger and cinnamon in a pan and sir to combine. Place the ham in the centre then add enough cold water to cover everything. Bring the mixture to a boil then reduce to a simmer and cook for 90 minutes.

At the end of this time, remove the ham from the pan and set aside to cool. Remove the rind from the ham and use a sharp knife to cut a diamond pattern in the top of the fat exposed on top of the ham. Use the 10 cloves for the glaze to stud the top of the ham, ensuring that they're spread out evenly. Now combine the honey and mustard to a smooth paste and brush this mixture evenly all over the top of the ham. Place the ham on a baking tray, cover the sides with aluminium foil (but leave the glazed top uncovered. Transfer to an oven pre-heated to 180°C and bake for about 30 minutes.

Remove for the oven and allow to cool before slicing and serving.
