Christmas Glögg (Christmas Glogg)

Christmas Glögg is a traditional Swedish recipe (also known throughout Scandinavia) for the classic mulled and fortified wine drink, flavoured with fruit and spices that's traditionally served at Christmas. This is a Scandinavian classic, a festive version of the mulled drink, Glögg, that's often seen served at Christmas fairs.

Ingredients:

2.25l (3 bottles) dry red wine
350ml vodka
350ml brandy
2 cinnamon sticks
pared zest of 1 lemon
250g dried figs
15 green cardamom seeds (note, seeds not pods)
15 cloves
3 pieces of fresh ginger
150g sugar (or to taste)
750ml port wine or Madeira
raisins and almonds
375ml beer (bitter and lager both work)
5 cardamom seeds
5 cloves

Method:

Begin with the starter mixture: In a large pan combine half a bottle of red wine (375ml) with the vodka and brandy, the cinnamon sticks, the lemon zest, the cardamom seeds, cloves, ginger and the figs. Bring to a boil then take off the heat, cover and allow to infuse over night.

The following day, stir the sugar into the mixture and add the remaining cardamom seeds and cloves along with the port or Madeira. Bring to a simmer than add raisins and almonds to taste. Just before serving add the beer.

Serve hot in glasses (make certain you add some of the raisins and almonds).
