These crunchy biscotti with a hint of spice and zesty lemon are ideal as Christmas gifts.

Ingredients:

350g plain flour
2 tsp baking powder
2 tsp mixed spice
250g golden caster sugar
3 eggs, beaten
finely-grated zest of 1 lemon
100g dried cherries
50g unsalted pistachios, shelled
Icing sugar, for dusting

Method:

Preheat your oven to 180°C (160°C fan/350F/gas mark 4). Line 2 baking trays with non-stick baking paper.

Sift together the flour, baking powder, mixed spice and sugar into a large bowl and beat with a whisk to ensure they're well combined. Stir in the eggs and lemon zest.

Bring the ingredients together as a dough then add the cherries and pistachios and knead until evenly distributed.

Divide the dough into 4 equal pieces, and roll each piece into a sausage about 30cm (12 in) long.

Place two of these dough sausages on each baking tray, ensuring that you space then well apart. Transfer to your pre-heated oven and bake for 25-30 minutes until the dough is firm. Remove from the oven and reduce the temperature to 140°C (120°C fan/285F/gas mark 1).

Cut each piece of baked dough into 1cm-thick slices and arrange these flat on the baking sheets. Bake for another 15 minutes, flip over and bake for a further 10 minutes on the opposite side.

Allow to cool on a wire rack, then dust with icing sugar before serving, or wrapping in gift bags or boxes, ready to give away.
