These are maize kernel pancakes typically served for breakfast.
Ingredients:
350g fresh maize kernels cut from the cob (white or yellow)
40g flour
50g sugar
80ml milk
2 eggs
2 tbsp butter
1 tsp vanilla extract
1/4 tsp ground cinnamon
pinch of salt
Method:
Using a food processor or a blender, combine all the ingredients. Pulse to chop then run the motor gently until you get a crumbly mixture (don't overdo it, you don't want a smooth paste).
Place a lightly oiled pan over medium-high heat. When hot add 4 tbsp (60ml/1/4 cup) of the batter onto the pan. Cook until lightly brown on each side, just like making pancakes.
Traditionally they're served it with a spoonful of sour cream on top but you can eat them plain.
