Chocolate Velvet Cheesecake

Chocolate Velvet Cheesecake is a traditional British recipe for a classic no bake cheesecake of a cream cheese, chocolate, sugar, egg yolk, cream and beaten egg white topping baked on a chocolate digestive and butter base. Ingredients:

250g dark chocolate digestive biscuits
75g butter, melted and allowed to cool
225g cream cheese (or you can use my home-made cream cheese recipe to prepare your own)
175g caster sugar
1 tsp vanilla extract
175g dark chocolate, melted in a bain-marie
2 large egg yolks
300ml double cream
1 egg white

Method:

Crush the biscuits to crumbs and mix with the melted butter before pressing into the base and up the sides of a 20cm flan dish. Place in an oven pre-heated to 180°C (180°C fan/350°F/Gas Mark 4) and bake for 15 minutes.

Meanwhile beat together the cream cheese and 100g of he caster sugar before adding the vanilla extract, then the melted chocolate and finally the egg yolk. After each addition mix well to combine.

Whip the cream until just stiff then fold into the cream cheese mix. Finally whisk the egg whites until just stiff before adding the remaining sugar to them, and whipping until combined. Fold into the chocolate mixture then pour over the cake base. Smooth the top then chill in the refrigerator for at least 4 hours, or until completely set.
