Chocolate and Vanilla Fudge is a traditional British recipe for a classic fudge made from a chocolate fudge mix topped with a plain fudge mix that's cut into squares and which makes an excellent Christmas treat or home-made gift. Combine the milk, condensed milk, butter, golden syrup, granulated sugar and vanilla extract in a large pan. Heat slowly, stirring constantly, until the sugar has dissolved and the butter has melted.
Bring the mixture to a boil and cook, stirring constantly, until a little of the mixture dropped into cold water forms a soft ball (this is the soft ball stage, equivalent to 116°C [240°F] as measured on a confectioner's thermometer).
Take off the heat and, working quickly, pour half the mixture into a bowl. Add the chocolate to the liquid remaining in the pan and stir gently until the chocolate has melted.
Quickly beat the chocolate and plain mixtures with a wooden spoon until thick and grainy. Pour the chocolate fudge into a well-buttered shallow pan (about 33 x 23cm [12 x 9 in]) then working quickly pour the plain fudge on top.
When the mixture has partially set mark into squares then put aside until completely set. Divide into squares and store in a jar with a tight-fitting lid.
