Chocolate Sauce is a traditional British recipe for a classic sweet milk-based sauce thickened with cornflour (cornstarch) and flavoured with cocoa powder that's typically served hot with chocolate-based desserts. Blend the cornflour, cocoa powder and sugar with 1 tbsp of the milk to form a smooth paste. Heat the remaining milk with the butter until just boiling. Whilst whisking constantly pour the milk onto the blended cocoa mixture (ensure you whisk constantly, as this prevents lumps from forming). When smooth and completely blended return the mixture to the pan and bring to a boil, stirring until it thickens.
Continue cooking for 1 or 2 minutes longer. Serve hot with steamed or baked sponge puddings, particularly chocolate-based puddings.
