Chocolate Rocky Road Muffins: a classic British chocolate muffin with chocolate and mini marshmallows.
Ingredients:
200g self-raising flour
50g cocoa powder
2 tsp baking powder
100g caster sugar
100ml sunflower oil
100ml milk
2 medium eggs, beaten
50g chocolate chunks
25g mini marshmallows
Method:
Sift together the flour, cocoa powder and baking powder into a large bowl then stir in the sugar.
In a separate bowl, combine the oil, milk and eggs, beating thoroughly to combine. Pour this mixture over the dry ingredients and stir to combine.
Stir in half the chocolate chunks and the marshmallows then line the wells of a 12-hole muffin tin with paper cases and spoon in the batter. Use the remaining chocolate and marshmallows to scatter over the top.
Transfer to an oven pre-heated to 180°C (Gas Mark 6) and bake for between 25 and 30 minutes, or until well rise and firm to the touch with a cracked top surface.
Allow to cool in the tin for 5 minutes then turn out onto a wire rack. Serve warm.
