Chocolate and Raspberry Croissants: Classic British recipe for a barbecue dessert of croissants filled with raspberries and chocolate cooked until the chocolate melts.

Ingredients:

4 butter croissants
4 tsp raspberry preserve
75g dark chocolate
125g raspberries
oil, for greasing

Method:

Using a serrated knife slice the croissants in half. Spread the lower half of each one with 1 tsp of the raspberry preserve.

Grate the chocolate and sprinkle over the raspberry preserve. Lightly grease 4 sheets of kitchen foil then brush each one with a little oil.

Divide the raspberries between the croissants, setting them on top of the grated chocolate. Replace the top half of each croissant then place each on on its own sheet of foil then wrap the foil to completely enclose the croissant.

Place a barbecue rack 15cm above hot coals. Sit the croissants on top of the rack and leave for about 12 minutes or until they are heated through and the chocolate has just begun to melt.

Now remove the foil and transfer the croissants to individual serving plates.

Serve hot.
