Chocolate Ice Cream is a traditional American recipe for a classic dessert of an ice cream made from a cream, sugar, cocoa powder, vanilla and egg yolk custard which is churned in an ice cream maker. Ingredients:
4 egg yolks, lightly beaten
200g sugar
500ml dessert cream (needs to be about 18% milk fat [but no more than 25% milk fat])
360ml milk
80g cocoa powder, sifted
2 tsp vanilla extract
Method:
Beat the eggs yolks lightly before adding the sugar and beating until light and creamy. Meanwhile combine the cream and milk in a pan and cook gently. As the milk mixture is warming beat-in the cocoa and continue cooking until steaming, but not boiling. Take off the heat then beat into the egg yolk and add the vanilla extract. Set aside to cool then pour the mixture into the bowl of an ice cream machine and churn according to the manufacturer's instructions.
