This is a modern Cornish twist on the traditional chocolate brownie that includes Cornish clotted cream fudge and Cornish sea salt in the batter.

Ingredients:

225g (1/2 lb) of unsalted butter
275g (10 oz) of dark chocolate (at least 70% cocoa solids)
400g (15 oz) of caster sugar
5 eggs
200g (7 oz) of plain flour
100g (3 1/2 oz) of fudge, chopped
10g (1/2 oz) of Cornish sea salt

Method:

Combine the butter, chocolate and sugar in a bain-marie (double boiler) over barely-simmering water. When melted, stir until the sugar dissolves then take off the heat.

In the meantime, crack the eggs into a clean bowl and beat then until they stand in stiff peaks. Carefully fold the chocolate mix into the beaten eggs. Sift the flour into a separate bowl then fold into the chocolate and egg mix.

Add the chopped fudge and sea salt then stir to combine. Pour the resultant batter into a baking tray lined with greaseproof (waxed) paper then transfer to an oven pre-heated to 150ºC (300ºF) and bake for about 20 minutes, or until the brownies are cooked. When done, they should be set, but still slightly soft in the centre.

Remove from the heat and set aside to cool. When they are cold, cut into squares and serve.
