Chocolate Fudge: Classic British recipe for a sweet (candy) made from a blend of chocolate, butter, sugar and evaporated milk that makes an excellent Christmas treat or even a home-made gift.
Ingredients:
225g (8 oz) plain chocolate
225g (8 oz) butter
900g (2 lbs) granulated sugar
440ml tin of evaporated milk
240ml (1 cup + 1 tbsp) water
Method:
Chop the chocolate into small pieces, place in a heat-proof bowl and sit over a pan of barely-simmering water. Stir until melted and smooth.
In the meantime, heat together the butter, sugar, milk and water in a heavy-based pan, stirring constantly, until the sugar has dissolved. Stir in the chocolate then bring to a boil.
Continue boiling steadily, stirring constantly, until a little of the mixture dropped into cold water forms a soft ball (this is the soft ball stage, equivalent to 116°C [240°F] as measured on a confectioner's thermometer).
Take the pan off the heat then immediately sit the pan in a large bowl or pan of cold water to stop any further cooking. Set aside for 2 minutes then beat the mixture with a wooden spoon until thick and grainy (but not glossy).
Pour the fudge into a well-buttered 30 x 17.5cm (12 x 7 in) shallow baking tin. Allow to cool until nearly set then cut into squares. When completely cooled break into squares.
