Chocolate Fondue with Fruit Platter is a modern British recipe for the classic vegetarian dessert of mixed fruit pieces served with a syrup and chocolate dipping sauce and which makes an excellent dessert for Valentine's day. Ingredients:
110g sugar
110ml water
400g plain chocolate, chopped into pieces
2 tbsp golden syrup
mixture of fruit cut into bite-sized pieces (plums, strawberries, bananas, apples, oranges, dates, pineapple etc)
Method:
Combine the sugar and water in a saucepan. Heat gently until the sugar dissolves then bring to a boil and cook until you have a golden syrup.
Melt the chocolate slowly in a bain-marie (double boiler). Take the chocolate off the heat and stir in the golden syrup. Now work in enough of the sugar syrup to give you a smooth sauce.
Allow to cool slightly then turn into a heat-proof bowl. Serve the fruit pieces with skewers or fondue forks and allow your guest to dip the fruit into the chocolate sauce.
