Ingredients:

300g Finely-grated carrots
150g Granulated sugar
120ml Canola oil (or vegetable oil)
240ml Boiling water
300g Whole-wheat flour
100g unsweetened cocoa powder
1 tsp ground cinnamon
1 1/2 tsp Baking powder
1/2 tsp Salt

Method:

In a large bowl, combine the grated carrots, sugar and oil. Once they are thoroughly combined pour the boiling water over the mixture. In a separate bowl, combine all the remaining ingredients. Add these to the carrot mixture and mix well to combine. Pour into a lightly oiled & floured 20cm square pan. Place in an oven pre-heated to 170°C (325°F/Gas Mark 3) and bake for 35 minutes, or until a skewer inserted into the centre of the cake emerges cleanly.
