Chocolate Banana Cake

This is a rather excellent twist on the devil's food cake idea. The chocolate in the basic recipe masks the banana flavour very well and you end-up with just a hint of the fruit. However, the bananas are excellent at keeping the cake moist and this is a great way of using-up any over-ripe bananas you might have lying around.

Ingredients:

1 (550g) devil's food cake mix
3 large eggs
180ml buttermilk
80ml vegetable oil
2 ripe bananas, mashed
180g dark chocolate chips
icing sugar, to dust

Method:

Add the cake mix to a bowl then add the eggs, buttermilk and vegetable oil and beat together until the batter is smooth. Add the bananas to a bowl and mash with a fork until smooth then add to the cake batter and beat to thoroughly incorporate. Stir-in the chocolate chips then turn the batter into a greased tube or bundt pan.

Transfer the cake to an oven per-heated to 175°C and bake for about 40 minutes, or until the top is golden and a skewer inserted into the centre of the cake emerges cleanly. Allow to cool in the pan for 10 minutes then loosen with a spatula and turn onto a wire rack to cool completely.

Transfer to a serving plate, dust with icing sugar and serve.
