This makes an elegant Valentine's day breakfast in bed for two.
Ingredients:
For the Blinis:
90g
buckwheat flour
1 tsp baking powder
150ml whole milk
1 tsp mustard powder
70g mature Cheddar cheese, grated
small handful of chopped chives
2 egg whites
pinch of salt
knob of butter
salt and freshly-ground black pepper, to taste
For the Scrambled Eggs:
4 eggs + 2 egg yolks
knob of butter
salt and freshly-ground black pepper, to taste
To Serve:
150g smoked salmon
2 tbsp fresh chives, chopped
1 lemon, sliced into wedges
Method:
Begin with the blini batter. Combine the buckwheat flour and baking powder in a bowl. Add a pinch each of salt and freshly-ground black pepper and mix thoroughly to combine. Beat in the milk until smooth then stir in the mustard powder, Cheddar cheese and chives then mix again.
Add the egg whites to a clean and dry bowl along with a pinch of salt. Beat the egg whites until soft peaks form then, using a metal spoon, gently fold the egg whites into the blini batter.
Place a frying pan over medium-high heat. Melt the butter in the pan, and when hot spoon generous tablespoons of the batter into the pan. Use the back of the spoon to spread the mixture until you have rounds about 10cm in diameter. Fry the blinis until small bubbles appear on the surface and the base looks browned and cooked (about 2 to 3 minutes).
Turn the blinis over and cook on the other side for about 2 minutes, or until golden brown. Remove with a palette knife and transfer to a low oven to keep warm. Repeat the process to cook the next batch and proceed in this way until all the batter has been fried.
For the scrambled eggs, whisk the eggs in a bowl and season to taste with salt and black pepper. Melt the butter in a small pan over medium heat. When the butter is foaming, pour in the eggs, stirring a little so that the eggs break up as they cook. Continue cooking for about 2 minutes then take the pan off the heat an set aside to allow the eggs to continue cooking for about 2 minutes more.
To serve, arrange the blinis on serving plates, spoon over the scrambled eggs then sprinkle on the chopped chives. Arrange the smoked salmon on the side and garnish with the lemon wedges. Serve immediately.
