Chipsi Mayai is the Swahili for "chips and eggs" and this is essentially an omelette containing chips (french fries) that's also known as zege. It's the most popular street food found all over Tanzania. The dish was invented in the streets of Dar es Salaam. In its most basic form, chipsi mayai is a simple potato-egg omelette. It is available in all regions of Tanzania, from the most remote villages to large towns. Food stands both indoors and on streets make them to order. It is the unofficial national dish of the country. It is often served with kachumbari or pili-pili, which can be any type of hot sauce.

Ingredients:

2 Eggs
200g pre-cooked chips (French Fries) [see the recipe for moules frites for classic fries]
Salt and freshly-ground Black Pepper, to taste
Oil for frying
hot sauce, to accompany

Method:

Prepare about 200g chips (French fries).

In a bowl whisk together the eggs, then season with salt and black pepper to taste. Add the chips to the bowl and mix it all well

Heat the oil in a frying pan, then add the chip-egg mixture to it. Cook for 3-4 minutes until golden on the bottom then flip and cook the other side

Serve hot with your favourite chilli sauce, bread or have it as is.
