Chinese Sweet and Sour Sauce

Chinese Sweet and Sour Sauce is a traditional Chinese recipe for a classic sauce of rice wine vinegar, ketchup and soy sauce thickened with cornflour and flavoured with bell pepper and pineapple. Ingredients:

160ml rice wine vinegar (or white wine vinegar)
8 tbsp brown sugar
2 tbsp ketchup
2 tsp soy sauce
4 tsp cornflour mixed to a smooth slurry with 3 tbsp water
8 tbsp green bell pepper, finely diced
8 tbsp pineapple chunks, diced (optional)

Method:

Combine the vinegar, brown sugar, ketchup and soy sauce in a pan and bring to a boil. Add the bell pepper and pineapple (if using) and cook for about 4 minutes, or until soft.

Whisk together the cornflour and water to a smooth slurry. Whisk into the sauce until smooth, return to a simmer and continue cooking until thick. Transfer to a jar and keep in the refrigerator until needed.
