Chima de Arroz (Chima Rice)

Also spelled xima, this is the Mozambican equivalent of the paps of southern Africa and the fufus of West Africa, but made of rice flour rather than the more typical maize, yam or cassava.
Ingredients:
400ml coconut milk
400g rice flour
salt, to taste
Method:
Pour the coconut milk into a pan and bring to a boil. Add the rice flour in a steady stream, stirring constantly with a wooden spoon, to ensure there are no lumps.
Bring back to a simmer, season to taste with salt and cook, stirring constantly until the chima has thickened (it should have a very thick porridge-like consistency).
Turn onto a serving dish and serve as an accompaniment to meat, fish and seafood dishes.
