Using it as a topping for a jacket potato is one of the classic ways of using-up leftover chili, so you get a really tasty and filling lunch dish.

Ingredients:

leftover chili (about 1l)
4 baking potatoes
grated cheese, for topping
sprigs of curly parsley, to garnish
salt and freshly-ground black pepper, to taste

Method:

Scrub the potatoes, then pierce each one several times with a fork. Place the potatoes in your microwave and cook for 15-16 minutes, until tender (alternatively bake in a hot [200°C] oven for 60 minutes). (To test the potatoes, squeeze them with a kitchen towel or oven mitt. If the potato gives without resistance and starts to open up, it's ready. If it still seems a bit firm, microwave them for another minute at a time until tender.)

Meanwhile, reheat your chili in a pan on the stove over medium heat, until warmed through.

Cut a slit across the top of each potato and fluff the insides with a fork, pulling the potato away from the sides. Season the potatoes lightly with salt and pepper.

Top each potato with 1/4 of the chili, garnish with a generous handful of grated cheese, garnish with a sprig of curly parsley and serve.
