Chicken Yakitori Grilled Chicken Skewers is a traditional Japanese recipe for a classic snack of chicken thigh pieces marinated in a sweet sauce that are grilled or barbecued before serving. Ingredients:
500g chicken thighs (boned and skinned)
negi (Japanese leek) [or use young leeks or spring onions]
4 tbsp soy sauce
1 tsp mirin or sake
3 tbsp sugar
1 tbsp honey
small wooden skewers
Method:
Combine the soy sauce, mirin, sugar and honey in a small pan. Add 1 tsp water and heat gently until the sugar dissolves and the mixture is homogeneous. Take off the heat and set aside.
Cut the chicken thighs into pieces about 3cm long and 2cm in cross-section. Place these chicken pieces into the sauce, toss to coat and set aside to marinate.
Cut the leeks or spring onions into 3cm lengths. Thread about 4 pieces of chicken and 2 pieces of leek onto each skewer.
Place under a hot grill (broiler) and cook, turning frequently and basting with any left-over marinade until done through. These can also be cooked on a barbecue.
