Chicken with Cashew Nuts a Classic Chinese recipe for a stir-fry dish of chicken in a light soy sauce marinade cooked with bell pepper, mushrooms, ginger and garlic and finished with toasted cashew nuts.
Ingredients:
500g boneless chicken meat, cut into bite-sized pieces
3 dried Chinese mushrooms, soaked in warm water for 20 minutes
2 tbsp groundnut oil
4 slices of fresh ginger, peeled
1 tsp garlic, finely chopped
1 red bell pepper, cut into 2cm squares
1 tbsp light soy sauce
90g toasted cashew nuts
For the Marinade:
3 tbsp light soy sauce
1 tsp Shaoxing rice wine
pinch of sugar
1/2 tsp salt
Method:
Combine all the ingredients for the marinade in a bowl. Add the chicken, toss to coat then cover and set aside to marinate for 20 minutes.
Squeeze any excess water from the mushrooms then slice the caps thinly (discard the tough stems), reserve the soaking water.
Place a wok over high heat then add 1 tbsp of the oil. Add the ginger and stir-fry until fragrant. Stir in the chicken and cook for 2 minutes or until the meat begins to turn brown. Just before the chicken is cooked through, remove and set aside.
Add the remaining oil to a clean wok and use to stir-fry the garlic until fragrant. Add the mushrooms along with the bell pepper and stir-fry for 1 minute. Now add 2 tbsp of the mushroom soaking water and cook for 2 minutes more, or until the water has evaporated.
Return the chicken to the wok then add the light soy sauce and the cashew nuts and stir-fry for 2 minutes, or until the chicken is thoroughly cooked through.
