Chicken Stellette Soup

This soup is named after the pasta stars, stellette used to make it. Think of it as chicken and stars soup, if you wish.

Ingredients:

900ml chicken stock
1 bayleaf
4 spring onions, sliced
225g button mushrooms, sliced
115g chicken breast fillets, cooked by boiling and skinned
50g stellette soup pasta
150ml dry white wine
1 tbsp fresh parsley, chopped
salt and freshly-ground black pepper, to taste

Method:

Combine the chicken stock and bayleaf in a pan then bring to a boil. Add the spring onions and mushrooms and bring back to a simmer.

Add the pasta to the pan, cover and simmer for about 8 minutes, or until the pasta is tender. Just before serving slice the chicken thinly and add to the pan along with the wine and parsley. Allow to heat through for about 2 or 3 minutes then ladle into a warmed soup tureen and serve.
