Chicken Muamba is a traditional Angolan recipe for classic dish of marinated chicken cooked in a tomato and nyembwe (palm soup base) stock thickened with okra. The full recipe is presented here and I hope you enjoy this classic Angolan version of: Muamba de Galinha (Chicken Muamba).

Ingredients:
1 medium chicken, cut into serving pieces
1 large onion, chopped
6 tomatoes finely chopped
500ml Nyembwe Sauce
4 garlic cloves, finely chopped
juice of 1 lemon
500g okra
salt an black pepper
Method:
Season the chicken with a mix of the garlic, salt, black pepper and lemon juice. Allow to marinate then put the chicken and marinade in a large pot along with the onion, tomatoes and nyembwe sauce. Bring to a boil, reduce to a simmer and cook for 40 minutes. When the chicken is almost done add the okra and cook for 10 minutes more.
