Chicken, Herb and Lemon Pie: An Irish recipe for a pie of chicken in a lemon and herb base with mushrooms and cream that's topped with mashed potatoes and finished with a soft cheese glaze.

Ingredients:

650g freshly-prepared mashed potatoes
4 on the bone chicken portions (each one about 350g in size)
finely-grated zest of 1 lemon
juice of 1 lemon
40g butter
225g button mushrooms, sliced
2 tbsp plain flour
350ml milk
2 tbsp fresh chives, chopped
2 tbsp fresh parsley, chopped
1 fresh bayleaf
150ml soured cream
4 tbsp hot milk
60g full-fat soft cheese, for glazing
salt and freshly-ground black pepper, to taste

Method:

Add the chicken pieces to a bowl and scatter over the lemon zest and the lemon juice. Toss the chicken to coat, then set aside in a cool place to marinate for between 2 and 4 hours, turning the chicken occasionally.

Melt the butter in a heavy-based frying pan. Add the chicken pieces and fry to brown in the butter. Transfer to a baking dish then use the butter remaining in the pan to fry the mushrooms until lightly browned. Mix in the baking dish with the chicken.

Stir the flour into the pad and cook over low heat for 1 minutes. Slowly pour in the milk, stirring constantly, then gently bring to a boil, still stirring constantly. Simmer for 2 minutes then take off the heat and stir in the herbs, fennel seeds, soured cream and any lemon juice left over from the chicken pieces.

Season this mixture to taste then pour over the chicken and mushrooms.

Beat the hot milk, seasonings and soft cheese into the mashed potatoes, then spoon over the chicken and mushroom mix. Glaze with a little milk, then transfer to an oven pre-heated to 180°C and bake for about 35 minutes, or until piping hot and nicely browned on top.

Serve hot.
