Chicken Chow Mein a Classic Chinese recipe for a stir-fry dish of chicken breasts, garlic, red bell peppers, shiitake mushrooms, spring onions, beansprouts and egg noodles.

Ingredients:

250g dried medium Chinese egg noodles
2 tbsp sunflower oil
300g cooked chicken breasts, shredded
1 garlic clove, finely chopped
1 red bell pepper, de-seeded and sliced thinly
100g shiitake mushrooms, sliced
6 spring onions, sliced
100g beansprouts
3 tbsp soy sauce
1 tbsp sesame oil

Method:

Slightly break up the noodles and place in a large dish. Pour over just sufficient boiling water to cover them then set aside as you prepare the remaining ingredients.

Place a wok over medium heat. Add the oil and swirl around to coat the sides of the dish. When the oil is hot, add the chicken, garlic, bell pepper, mushrooms, spring onions and beansprouts and stir-fry for 5 minutes.

Thoroughly drain the noodles and add to the wok then toss well to mix and stir-fry for 5 minutes more. Drizzle over the sesame oil and toss to mix.

Divide the mixture between warmed serving bowls and serve immediately.
