Ingredients:

200g rice noodles
3 chicken breasts, cut into bite-sized pieces
150g carrots, chopped
80g green beans (or mangetout)
1 onion, chopped onion
1 garlic clove, crushed
1 tbsp brown sugar
100ml soy sauce
Neutral oil for frying
pinch of freshly-grated nutmeg

Method:

Cook the noodles in a pot of boiling water for 2 minutes. Drain, cut in half then set aside.

In a wok, stir-fry the onion and garlic for a few minutes in a little oil. Add the chicken and continue stir-frying for 5 minutes more.

Add the carrots and beans, mix well, and cook for 5 minutes.

Add the drained noodles with the soy sauce and sugar. Toss to combine, add the nutmeg and simmer for 5 minutes then serve.
