Chettinad cuisine has a reputation for slightly more complex and involved cookery, but it’s worth it if you like spicy, aromatic food. My wife loves good fish and she really loves this recipe.
Ingredients:
For the Marinade:
4 shallots, roughly chopped
4 garlic cloves
½ tsp cumin seeds
½ tsp fennel seeds
½ tsp whole black peppercorns
½ tsp ground turmeric
1 ½ tsp ground coriander
2 tsp chilli powder
Salt, to taste
For the fish:
200g (approx. 5 pieces) of fish, cut into medium-sized steaks
Oil, for frying
Tomato and onion salad to serve (optional)
Rice, to serve
Method:
Combine the shallots, garlic, cumin seeds, fennel seeds, black peppercorns, ground turmeric, ground coriander, chilli powder, and salt in the bowl of a small food processor. Process until you have a paste, adding a little water as needed.
Place the cleaned fish steaks in a bowl. Rub with the marinade then transfer to the refrigerator and marinate for at least 30 minutes.
Heat oil in a pan over medium-high heat. Place the fish pieces in the pan and shallow fry for about 10 minutes, or until done. Serve with rice and tomato and onion salad.
