Here is an interesting twist on the traditional Christmas cake that is a variant of the mincemeat cake which enriches the cake further by the addition of cocoa powder and white chocolate chips. Using mincemeat means that the cake can be baked just a few days before Christmas, as it does not require maturing.

Beat together the cheeses, garlic, Italian seasoning, chives and milk in a bowl.
Slice off 5mm from the base of each tomato so that the seeds are just exposed (the stem ends should be flat enough for the m to sit upright, if not trim a little off the ends).
Using the handle of a small teaspoon, scoop out as much of the seeds and pulp from the fruit as you can. Fill each tomato with 1 tsp of the cream cheese mixture. Top with the reserved tomato bottoms.
Arrange on a tray, sitting them stem side down and serve immediately (alternatively, you can chill for up to 2 hours before serving).
