These are really great to share for Valentine's day... and, yes, I know that Fuchsias are not normally in flower then. But I tend to grow or propagate my fuchsias in the garage over winter so they're ready to go out in spring. This does mean that I actually do have flowers in February and they are in flower all spring, summer and early autumn long.

Ingredients:

500g dark chocolate (I would suggest at least 65% cocoa solids)
35g tart dried cherries, coarsely chopped
35g sweet dried cherries, coarsely chopped
1 tbsp Kirsch (or any cherry flavoured liqueur) or 1 tbsp cherry jam
Fresh Fuchsia blossoms to garnish

Method:

Line two baking trays with greaseproof (waxed) paper and set aside.

Coarsely chop the chocolate then place in a large heat-proof bowl. Set this over a bath of simmering water (do not allow the bottom of the bowl to touch the surface of the water). Stir with a spatula until the chocolate has completely melted (about 6–10 minutes).

Now stir in the chopped cherries. Take off the heat and stir in the cherry liqueur or cherry jam.

To make the chocolate bites, scoop out tablespoons of the chocolate mixture then transfer to the lined baking trays to shape small disks. Add the fuchsia flowers to garnish then transfer the baking trays to the refrigerator to harden (30–60 minutes).

You can consume the chocolates as soon as they harden, but stored in an air-tight container they will keep in the refrigerator for up to a week.
