Cheese Scones

The cheese variant is one of the classic scone types and this makes an excellent addition to any Cornish cream tea.

Ingredients:

100g (3 1/2 oz) plain flour
1 tsp baking powder
15g (1/2 oz) butter
30g (1 oz) grated cheese
75ml (5 tbsp) milk
salt and freshly-ground black pepper, to taste

Method:

Sift together the flour, baking powder and a pinch of salt into a bowl. Season with black pepper and stir to combine. Dice the butter and add to the bowl. Rub into the flour until the mixture resembles fine crumbs then stir in the grated cheese.

Add the milk to make a soft dough. Turn the dough out onto a lightly-floured work surface and knead lightly then shape and pat down to a round about 2.5cm (1 in) thick.

Using a sharp knife mark the dough into quarters then brush the top with a little milk to glaze. Transfer to an oven pre-heated to 210ºC (400ºF) and bake for about 10 minutes, or until nicely risen, cooked through and lightly browned on top.

Turn onto a wire rack and allow to cool. Like most scones, these are best served warm.
