Cheese Fruit Log

Ingredients:

35g shelled pistachio nuts
250g cream cheese, warmed to room temperature
50g dried apricots, finely chopped
3 spring onions, finely shredded
50g sun-dried tomatoes, finely chopped
3 tbsp flat-leaf parsley, finely chopped
freshly-ground black pepper, to taste

Method:

Scatter the pistachio nuts on an ungreased baking tray, transfer to an oven pre-heated to 200&x00B0;C and bake for about 5 minutes, or until toasted golden brown. Turn into a bowl, allow to cool and chop finely.

Turn the cream cheese into a bowl and beat until smooth then fold in the dried apricots, spring onions and sun-dried tomatoes before adding a few twists of freshly-ground black pepper.

Combine the chopped pistachio nuts and parsley in a bowl then scatter this mixture over a sheet of greaseproof (waxed) paper, forming a rough rectangle about 20 x 6cm in size. Take the cream cheese mixture and shape into a log about 20cm long. Roll this in the pistachio and parsley mixture to coat then cover in clingfilm (plastic wrap) and refrigerate for about 150 minutes, or until firm.

Serve chilled, accompanied by savoury biscuits.
