This is a modern Cornish recipe for classic savoury cheese and chive scones served with slices of cheddar cheese, slices of pear and a drizzling of honey. You could also substitute a tart apple for the pears.
Ingredients:
450g (1lb) self-raising flour, plus extra for dusting
2 tsp baking powder
pinch salt
1 tsp English mustard powder
50g (1¾oz) butter, diced
225g (8oz) mature cheddar, grated
bunch of chives, chopped
200–250ml (4/5 to 1 cup) milk
To serve:
sliced cheddar (or other hard cheese), sliced pears and clear honey
Method:
Pre-heat your oven to 210C (190C Fan/430F/Gas Mark 6½).
Sift together the flour, baking powder, salt and mustard powder into a large bowl. Using your fingertips, rub in the butter until the mixture resembles flour crumbs. Stir in 200g (7 oz) of the cheese along with the chives. Now add enough of the milk to allow you to bring everything together as a soft, but not sticky, dough.
Turn the resultant dough out onto a lightly-floured work surface and knead briefly (do not over-work or the scones will be hard). Roll out to about 4cm (1 1/2 in) thick. Use a 6-7cm (2 1/2 to 2 3/4 in) pastry cutter cut out the scones and transfer to a baling tray (when cutting press straight down and do not turn the cutter or the scones will not raise).
Brush the tops of the scones with a little milk to glaze then sprinkle over the remaining cheese. Transfer to a pre-heated oven and bake of 12-15 minutes, until nicely risen and golden brown.
Transfer to a wire rack to cool. Serve whilst still warm. Cut in half, top with a slice of cheese, a slice of pear and a drizzle of honey.
