Charred Tuna Steaks: Classic British recipe for a dish of tuna stakes in a spicy soy sauce and mustard coating that are marinated and then cooked on a barbecue until lightly charred.

Ingredients:

4 tuna steaks
3 tbsp soy sauce
1 tbsp Worcestershire sauce
1 tsp wholegrain mustard
1 tsp caster sugar
1 tbsp sunflower oil
green salad, to accompany
flat-leaf parsley, to garnish
lemon wedges, to garnish


Method:

Arrange the tuna steaks in a shallow dish. In a bowl, whisk together the soy sauce, Worcestershire sauce, mustard, sugar and oil. Pour this marinade over the fish and turn to coat, ensuring that the tuna steaks are well coated.

Cover with clingfilm (plastic wrap) and set aside in the refrigerator to marinate for 2 hours.

After this time, transfer the tuna steaks to an oiled barbecue rack over hot coals.

Cook for about 6 minutes per side. Serve accompanied by a green salad and garnished with flat-leaf parsley and lemon wedges.
