Charoset is a traditional Moroccan recipe for a classic snack of dates, sultanas, raisins and walnuts moistened with wine that's rendered to a paste and rolled into small balls before being refrigerated to set. Add the dates, raisins, sultanas and walnuts to a food processor and render to a paste. Add just enough wine to form a sticky dough.
Line a baking tray with waked paper and drop the mixture in rounded teaspoonfuls onto the paper. Roll each drop with moistened palms into little balls. Refrigerate for at least 4 hours, until firm.
