Česnica (Serbian Christmas Bread)

Ingredients:

1kg flour
20g yeast
250ml oil
pinch of salt
warm water to bind

Method:

Sift the flour and salt into a bowl. Add the yeast and oil and mix to combine then stir-in just enough warm water so that the mixture comes together as a dough and comes away from the sides of the bowl. You are looking for a medium-soft dough.

Knead for a few minutes, until elastic then turn into a lightly-greased bowl. Set aside in a warm spot for 10 minutes. After this time cut off 1/5 of the dough and set aside. Pierce the remaining dough several times with a fork to remove any air bubbles near the surface then transfer to a greased baking tray and flatten like a pizza.

Take the remaining dough and shape into braids, birds or any Christmas shapes and use to decorate the top of the česnica. Transfer to an oven pre-heated to 180°C and bake for about 25 minutes, or until brown and well risen.

One Christmas traditional is to place a (clean) silver or gold coin in the bread before decorating and baking.

Serve warm.
