This is a really interesting fruity fish curry from Sao Tome that uses the local curry blend for flavouring. It shows how versatile this spice mix and how it goes very well with fish.

Ingredients:

600g white fish, cubed
2 apples, peeled and finely diced
1/2 mango, peeled and finely diced
1 onion, chopped
2 garlic cloves, finely chopped
200ml coconut milk
3 tbsp olive oil
4 tbsp Sao Tomean curry powder
2 tbsp coriander stalks, finely chopped
2 tbsp coriander leaves, coarsely shredded
Salt and freshly-ground black pepper to taste

Method:

Place a wok or deep frying pan over medium heat. When hot add the olive oil and use to brown the onion and garlic for about 8 minutes. At this point add the coriander stalks along with the fruit.

Mix well to combine then sprinkle over the curry powder and stir to coat. Pour in the coconut milk along with about 100ml water. Mix to combine, bring to a simmer and cook for 10 minutes over low heat.

Take off the heat, adjust the seasonings and blend to a sauce with a stick blender. Return to the heat, add the fish and cook for about 15 minutes, or until the fish is just done.

Take off the heat, turn into a warmed serving bowl, scatter over the coriander leaves and serve accompanied by rice.
