Caranguejo Grelhado (Grilled Crabs)

Caranguejo Grelhado (Grilled Crabs) is a traditional Guinean (from Guinea-Bissau) recipe for a classic dish of crabs that are coated in coconut milk and cooked on a barbecue. This dish is traditionally made with the locally caught fiddler-type crabs. These have a single large claw and are about 120g in weight. Two crabs make a good main course for one person. These are also commonly prepared at beach barbecues.

Ingredients:

8 crabs
300ml coconut milk
2 garlic cloves
salt, to taste
juice of 2 lemons

Method:

Remove the shells for the crabs then set the crabs aside.

Pour the coconut milk into a pan, season with salt then bring to a boil. Reduce to a simmer and cook the coconut milk until thick enough to coat the back of a spoon. Take off the heat and set aside to cool.

Season the crabs with salt and lemon juice. Place on a pre-heated barbecue and cook for about 30 minutes, or until done through. Whilst cooking, baste the crabs with the thickened coconut milk, so that they develop a thick coating.

Serve hot.
