Caramel Shortbread

This version of shortbread is often called 'Millionaires' Shortbread' due to its richness. A classic recipe that should be in any cook's repertoire.
Ingredients:
For the Base:
200g plain flour
150g margarine
75g caster sugar
For the Filling:
25g margarine
25g soft brown sugar
large tin of condensed milk
For the Topping:
200g milk chocolate
Method:
Begin by rubbing the margarine and flour together in a bowl until the mixture reaches the consistency of breadcrumbs. Add the sugar and mix then spread evenly over the base of a 23cm square tin which has previously been lined with baking parchment.
Bake in an oven pre-heated to 170°C (150°C/325°/Gas Mark 3) for about 35 minutes until the base is a golden brown. Set aside to cool
Add all the ingredients for the filling together in a saucepan and under constant stirring heat until it begins to simmer. Continue cooking and stirring until the mixture begins to thicken (some 3–4 minutes) then pour over the base, spread evenly and allow to cool.
Finally, melt the chocolate in a bain-marie and spread it evenly over the filling. Allow to cool completely then cut into squares with a sharp knife and serve.
