Ingredients:

2kg leg of kid
60g prosciutto fat, or seasoned lard
60ml olive oil
1 garlic clove
2 x 20cm long sprigs of rosemary
salt and freshly-ground black pepper, to taste
12 button onions, peeled
1kg baby new potatoes, scrubbed

Method:

Wash the meat and pat dry then sit, cut side down, in a roasting pan with the garlic clove. Dot the meat with the prosciutto fat or lard then lay the rosemary on top and sprinkle with the olive oil. Season to taste with salt and black pepper then transfer to an oven pre-heated to 210°C and roast for 15 minutes.

Add the button onions and potatoes then continue roasting the meat for a further 70 minutes, or until the meat is cooked through and nicely browned on the outside.
