I make copious notes and have been doing so for 30 years and more. Recently I came across a notebook of recipes from Cape Verde that I had made almost 25 years ago. This was a trip I made by ferry from Dakar in Senegal to Cape Verde. There I made notes on the food I encountered both in restaurants and in homes. This is the first of those recipes. Jagacida is also known as Portuguese rice and this is the Cape Verdian version of that dish. Note that there is no tomato in this recipe (in contrast to many versions you see on the internet). The flavour and colour, instead are imparted by the paprika.
Ingredients:
2 tbsp olive oil
1 medium onion, minced
125g (½ cup) minced linguica, chourico or other Portuguese-style sausage
2 cloves garlic, minced
30g (1⁄4 cup) sweet paprika
500ml (2 cups) water
salt, to taste
freshly ground black pepper, to taste
2 bay leaves
400g (14 oz) of cooked lima beans (traditional) or butter beans
200g (1 cup) long-grain rice (Uncle Ben's would be typical)
Method:
Heat the olive oil in a heavy-based saucepan or flame-proof casserole and use to fry the onion and sausage for about 2 minutes. Add the garlic and paprika and continue to cook for 3 minutes, or until the onion is translucent and the sausage is cooked through.
Add the water, salt, pepper, and bay leaves. Bring to a boil, add the beans and rice and stir to make sure that all the ingredients are well combined. Reduce to a simmer, cover the pot with a tight-fitting lid and cook over low heat for 35 minutes, or until the rice is tender and cooked through.
Remove the bayleaves, turn into a warmed serving bowl and serve immediately.
