Candied Tigernuts is a modern Fusion recipe for a classic sweet (candy) of tiger nuts coated in a sugar syrup flavoured with cinnamon and ginger. The full recipe is presented here and I hope you enjoy this classic Fusion version of: Candied Tigernuts.
Combine the sugar and water in a small saucepan, heat gently until the sugar has dissolved then bring to a boil and cook until the sugar caramelizes. Take off the heat and stir in all the remaining ingredients.
Stir constantly until the sugar cools and sticks to the tiger nuts. Pour onto a baking tray lined with non-stick (waxed) paper. Spread the mixture out evenly so that the tiger nut pieces do not stick together in a clump.
Set aside to cool then strip the tiger nut pieces from the paper, wrap in waxed paper and store in an air-tight jar.
